01.How to cook leather jacket
1 whole leather jacket, head and skin removed
2 tablespoons flour
Salt and pepper
2 tablespoons olive oil
- Place flour and a sprinkling of salt and pepper in a plastic bag.
- Place fish into bag and shake. Remove fillets, dust off excess flour.
- Heat oil in a large frypan on a medium to high heat.
- Place fish into pan cook for 5 minutes, then turn over and cook for a further 3 minutes or until fish flakes when separated with a fork.
Great with mushy peas
