½ butternut pumpkin, peeled, chopped 5 cm squares
1 tab olive oil
1 tab butter
1 clove garlic, crushed
½ red chilli, seeded, chopped
1 red onion, thinly sliced
1 ½ tsp cumin, ground
1 ½ tsp coriander seeds, ground
2 tabs coriander root, roughly chopped
1 ½ tsp mustard seeds
1 tsp brown sugar
1 bunch coriander leaves, roughly chopped
- In a large saucepan, boil pumpkin until just tender, drain well.
- Heat oil and butter in a large pan add garlic, chilli, onions, cumin, ground coriander, coriander root, mustard seeds, and brown sugar. Cook for 2 mins.
- Toss through pumpkin and coriander leaves.
- Serve with chicken or fish
