01.Irish Mashed Potato
Ingredients
6 waxy potatoes, washed and quartered (we used Necta)
2 spring onions, chopped
1 cup milk, approx
50g butter
Salt and pepper
Method
- Boil potatoes in a large saucepan, until tender. Drain well.
- In a microwave safe bowl heat milk, butter and spring onions in the microwave approximately 1 ½ mins or in a saucepan on the stove top.
- Leave for 5 minutes for flavours to infuse.
- Roughly mash potatoes (remove the larger pieces of skin) add milk mixture and salt and pepper to taste.
