01.Green and Gold Mash
6 floury potatoes, washed and quartered (we used Red Norlan)
1 bunch chives
1 cup milk, approximately
50 gms butter
Salt and pepper
¾ cup canned corn, drained
Handful wild rocket, chopped
- Boil potatoes in a large saucepan, until tender.
- Drain well.
- In a microwave safe bowl heat milk, butter and chives in the microwave for approximately 1 ½ minutes or in a saucepan on the stove top.
- Leave for 5 minutes for flavours to infuse.
- Roughly mash potatoes (remove the larger pieces of potato skin) add milk mixture and salt and pepper to taste.
- Fold in corn and rocket.
