01.Asian scrambled eggs
½ tablespoon peanut oil
½ red onion, finely sliced
2 fresh free range eggs, lightly beaten
1 teaspoon soy sauce
1 teaspoon fish sauce
1 shallot, chopped garnish
- Heat a non-stick pan or wok on a medium heat.
- Cook onion for approximately 2 mins, then turn down heat.
- Add egg, soy and fish sauce keep moving the eggs.
- When eggs are firm but moist serve and garnish with shallots.
