01.Prawns in champagne
Ingredients
Serves: 4
2 tablespoons olive oil
1 red onion, sliced
1 clove garlic, crushed
5 Kaffir lime leaves (3 sliced thin 2 left whole)
750g green prawns, heads removed or peeled
1 cup champagne
10 large cherry tomotoes, cut in half
Salt and pepper to taste
Coriander, optional
Chilli, optional
Method
- Heat oil in a large pan on high heat.
- Add onion, garlic, kaffir lime leaves and prawns.
- Cook for 2 minutes.
- Add champagne and cherry tomotoes.
- Reduce heat to medium and simmer with lid off for 8 minutes.
- Serve with rice if desired.
Tips
White wine can be used instead of champagne.
