01.Zucchini mint and feta salad
Ingredients
Serves: 4
2 large zucchini, sliced thinly lengthwise (use a peeler)
150g Danish feta, roughly chopped
½ cup mint, chopped finely
2 tablespoons extra virgin olive oil
Juice of ½ a lemon
Salt and pepper to taste
Method
- Toss all ingredients together in a bowl.
- Serve on a platter.
Tips
If you don't like raw zucchini, pour boiling water over the fresh zucchini for 30 seconds.
