1 small bulb fennel, washed and sliced thinly
1 tomato, sliced thinly
½ small red onion, sliced thinly
¼ cup parsley, roughly chopped
2 tablespoons red wine vinegar
¼ cup olive oil
Salt and pepper to taste
1 tablespoon grated lemon rind
Combine all ingredients in a bowl.
Spread salad out on a large serving plate.
Feta can be crumbled over the salad to finish it off.
