01.Egg and bacon pasta
300g fresh pasta, cooked and drained (save ¼ cup of pasta water)
100g chopped bacon, fried till crisp
50g parmesan cheese, finely grated
1 cup wild rocket
Salt and pepper to taste
- Place hot cooked pasta, bacon, rocket, eggs and half the parmesan cheese, salt and pepper in a large bowl.
- Mix well.
- Serve in large bowls sprinkle with parmesan cheese.
Add a couple of tablespoons of pasta water to the dish if it's too dry.
Dried pasta can be used, however it will take longer to cook.
