How to roast beetroot

Ingredients

2 litres cold water
6 medium size beetroot
2 tablespoons olive oil
Sea Salt
Cracked black pepper

How to roast beetroot

Method

  • Place water and beetroot in a large pot with the lid on bring to the boil, reduce heat to medium.
  • Cook for 20 minutes. Drain water.
  • Remove the skin of the beetroot by gently rubbing the skin under running water (best to wear gloves for this).
  • Place beetroot in a baking dish lined with baking paper or foil.
  • Drizzle over olive oil and add salt and pepper to taste.
  • Bake in a moderate oven 180°C for 25 minutes or until a skewer slides easily into beetroot.
  • Serve as desired.

Tips

Cut into quarters and make a beetroot salad.
Beetroot can be grated once cooled (after the boiling stage).
