01.How to cook oven baked duck breast
2 x 200g duck breast, fat trimmed around meat
- Preheat oven to 200°C.
- Preheat fry pan (suitable for an oven) on high for 2 minutes.
- Salt and oil breasts on both sides and place flesh side down.
- Cook for 3 minutes, turn breast over cook for further 2 minutes.
- Place fry pan with the duck into the preheated oven for 8 - 10 minutes depending on the thickness of the duck.
- Allow the duck to rest for 3 - 5 minutes.
- Serve sliced at an angle.
