- • Pleasant level of spice with plump currents and sultanas.
• The bun felt dense when picked up. This was evident when tasted. The flavour profile improved slightly when toasted.
• The appearance of fruit was good yet the flavour of the fruit did not come through when tasted. Lacking in spice.
• Sultanas plump and soft but not enough and not evenly distributed; texture a bit doughy.
• Toasts well but cross brittle and breaking off; better aroma and flavour than untoasted but little flavour or spiciness; texture tends to 'ball' and become doughy and heavy on chewing.
