01.Introduction
Test of 13 fine-blade (non-serated) 20cm knives priced $38 to $249
Modern kitchens probably have more gadgets than any other room in your home but there’s still one object that’ll get more use than just about everything else combined ... the humble kitchen knife. While it doesn’t need plugging in or an instruction book, knowing a little about knives can help you get the best from them.
Choosing a knife comes down to personal preference. Knives come in a variety of sizes, weights and handle types — try them out to see which suits your hand best. We also discovered that price isn’t everything: two of our top-rating knives cost considerably less than many other models on test.
Our home economist put the knives through their paces, checking cutting performance through a variety of foods. A specialist laboratory assessed how sharp they were.
Please note: this information was current as of January 2008 but is still a useful guide to today's market.
