01.French onion soup
2 tablespoons olive oil
5 brown onions, halved and sliced
1 clove garlic, crushed
7 fresh sage leaves
½ teaspoon smoked paprika
½ teaspoon sweet paprika
1 litre chicken stock
- On a medium heat fry onions, garlic and sage leaves in butter and oil, for approximately 10 - 15 minutes until soft.
- Add paprika, fry for 1 minute, add chicken stock.
- Bring to the boil and then simmer for 5 minutes.
- Serve with melted cheese on crusty bread.
To reduce the tears when slicing the onions, wash hands and peeled onions under cold water.
