01.Introduction
Ingredients
Olive oil
1 onion, peeled and diced
1 clove garlic
Jalepeno peppers or long red chill, optional
1 bunch coriander stalks, finely chopped
1 can refried beans
1 can kidney beans, drained and washed
250 ml bottle of taco sauce, (mild or hot)
1 bunch coriander leaves, roughly chopped
1 ½ cups of grated reduced fat cheddar
Sour cream
Note: If you want to include meat add 500g of chicken mince.
Method
On a medium heat in a pot heat oil and fry onion, garlic, chili and coriander stalks.
(Note: If you're adding meat, add it at this point and allow it to brown well).
Add refried beans, mix well.
Add kidney beans and taco sauce, mix well and simmer for 10 minutes.
Fold in coriander leaves.
Transfer mixture to a shallow oven proof dish.
Sprinkle over cheese and bake in the oven or under a grill for 6 – 8 minutes or until golden brown.
Serve with sour cream, jalepenos and corn chips.
Tip
Great entrée for a dinner party.
Use reduced fat cheese, it is less oily and browns well.
