½ cup white wine vinegar
2 tablespoons olive oil
1 tsp caraway seeds
1 white spring onion, finely chopped
1 tsp sugar
1 tsp salt
Pepper to taste
4x Lebanese cucumbers, peeled and thinly sliced
- Combine vinegar, olive oil, caraway seeds, onion, sugar, salt and pepper.
- Add cucumbers and allow to stand for a half hour before serving.
Slice cucumbers with a V-slice to get even thin slices.
Great with schnitzel and salmon patties.
